Few ever have the chance to sleep in a medieval tower \u2013 but at San Giusto you can do just that! The view from the terrace on top of the tower is magnificent, the stone interiors are richly evocative, and the thick walls create an atmosphere of otherworldly strength and silence.<\/p>\n

ORGANIC FARM<\/h5>\n

Nature and the land come first: we are proud to be a working farm. We produce lavender, lavandino (lavandula hybrida<\/em>),\u00a0\u00a0<\/em>and helichrysum, from which we extract essential oils. From our 200 olive trees we gather organic olive oil, and from our fields we harvest hay for our horses and donkeys.<\/p>\n

In the expansive pastures surrounding the abbey, our horses roam freely. For those who love to ride, Mauro Checcoli, two-time Olympic gold medallist in eventing, offers occasional training sessions based on the Caprilli method, the natural system of ethological horsemanship.<\/p>\n
